Anti-gravity cakes are absolutely stunning, but they’re not as tricky to make as you might think! With the right techniques and a little know-how, you can create a show-stopping cake that looks like it’s floating in mid-air. Here are my top 5 tips to help you master this magical effect and impress everyone with your next creation.
Using ganache (white or dark) will help support the decorations you choose to put on top as well as support the dowel that will be used to create the anti-gravity effect. Buttercream may be too soft to hold a tall dowel especially at room temperature. Structure may collapse.
Making Anti-Gravity Cakes will require you to add specific details especially to cover the dowel. Taking your time and paying special attention to detail will make the final look more believe-able. Don't Skip This Step!
Whichever item you choose to be the Anti-Gravity Item, make sure it is lightweight! Use smaller sized cans and empty them completely. The dowel can only hold so much before it topples over. I typically use wooden skewers. It is lightweight to hold firm in the cake and will support lightweight items wether Candy Wrappers, Chopsticks, Forks, etc
