My Method for Stacking a 3 Tier Cake
For this tutorial, I used an 8-inch cake for the bottom tier, a 6-inch cake for the middle tier, and a 4-inch cake for the top tier. All of the cakes should be fully frosted and well chilled before stacking. Chilled buttercream helps the cakes stay firm and prevents smudging while assembling the tiers.
Step 1: Add Supports to the Bottom Tier
Start with your 8-inch bottom tier. Insert 4–5 large bubble tea straws into the cake to create support for the next tier. The straws should be placed in a circle slightly smaller than the size of the next cake tier (the 6-inch cake).
Push each straw straight down until it touches the cake board, then trim it so it sits perfectly level with the top of the cake. These supports will carry the weight of the tier above.
Step 2: Add the Middle Tier
Before placing the next tier, spread a thin layer of buttercream on top of the bottom cake. This acts like glue and prevents the tier from sliding.
Carefully place the 6-inch cake on top.
Step 3: Support the Middle Tier
Next, insert 3–4 bubble straws into the middle tier using the same method. Trim them so they are level with the top of the cake. These supports will hold the top tier.
Add another thin layer of buttercream on top of the middle tier before placing the final cake.
Step 4: Add the Top Tier
Place the 4-inch cake on top, making sure it is centered. (I slightly off-center my cakes to make more room for the decorations)
Step 5: Insert the Center Dowel
This step is the most important part of stacking a cake for delivery.
Insert a long center dowel straight down through the entire cake, pushing it through all three tiers and into the main cake board. This keeps the tiers from shifting or sliding during transport.
I personally use wooden skewers for my center dowel. If you don’t have one long enough to go through all three tiers and into the board, you can use two skewers. Just make sure the first skewer goes all the way into the main cake board, then insert the second skewer through the remaining tiers.
I learned how important this step is early in my cake decorating career after I once had a cake tier slide off during delivery. Since then, I never skip the center dowel.
Step 6: Clean Up the Cake
Once the dowel is inserted, cover the small hole on the top of the cake with buttercream and smooth out any spots that may have been disturbed during stacking.
Step 7: Decorate and Chill
Finish decorating the cake as desired. Once decorating is complete, place the cake back in the refrigerator and allow it to chill thoroughly. A cold cake is much more stable for transport.
Step 8: Preparing the Cake for Delivery
When it’s time to deliver the cake, place it in a box that fits the cake board snugly. If the box is larger than the board, tape the board down or secure it so the cake cannot slide around during transport.
Drive carefully and avoid potholes, bumps, and speed bumps as much as possible. Even a properly stacked cake can shift if the drive is too rough.
