Moist cake is created by a combination of small techniques that most bakers overlook — mixing methods, ingredient balance, temperature control, and one key step that completely changes the texture of your cake layers. Once I started using this strategy, my cakes stayed moist for days, tasted richer, and my clients immediately noticed the difference.

The first thing I do is make sure my Oven is Moist! Place a pan of water into the oven to allow your cake layers to bake without losing moisture.
*Let the oven and water cool completely before removing the pan from the oven after baking. The water is Boiling HOT!

Bake at a slightly lower temperature. Typically 350 degrees is a good temperature to bake cakes. I bake mine at 325 degrees especially for larger cakes. This allows the cake to bake a bit slower, decreasing the risk of over-baking or burning, keeps the moisture from escaping too quickly, and gives a softer texture.

Remove the cake from the oven when the center is fully baked and has a few crumbs that stick to the toothpick (or whichever cake testing tool you use), if the toothpick comes out completely clean, it has lost some vital moisture, but no worries!
Saran wrap the cake carefully while still warm to trap the moisture in! The steam keeps the cake layers moist!

Place the wrapped cake straight into the Freezer! This stops the cooking process and cools down the cake layers quicker, allowing more moisture to not get lost during the cooling process.
You can let the cake completely freeze at this point or place in the refrigerator until ready to use.

The Final Step to achieving a moist cake is to use Simple Syrup on every cake layer. The best way to do this is to use the bottom or cut side of the cake layer and spread the simple syrup evenly. You can use a squeeze bottle or a brush to apply the simple syrup!
Use a good amount of Simple Syrup! The entire surface should be covered but does not have to be soaked.
Simple Syrup, if made correctly, will add moisture and not too much sweetness.

🎁 Bonus Tip!
When not actively working on a cake, keep the cake wrapped, boxed or in a container, especially for long periods of time. If crumb-coating a cake and letting it set overnight, wrap the entire cake in saran wrap. The cake can lose its moisture!
