Royal Icing Cookie Decorating doesn’t have to be complicated to look professional. In this tutorial, I’m breaking down how I decorate royal icing cookies as a professional, from icing consistency to decorating order and finishing touches. These are the same techniques I use to create clean, smooth, bakery-style cookies every time.
#1
The first step is to flood all your cookies. You want to use a good Royal Icing Recipe with flooding consistency- 15 seconds.
If you don't have your own recipe, use mine!
I use 15 second consistency to outline and flood all the cookies.
* Use a seamless piping bag so you wont have to use a tip.
Then use a toothpick to spread out the royal icing and pop all the bubbles. You can also gently tap the cookie flat on your work surface to eliminate all bubbles. This gives a smooth finish!
Outlining gives a more professional final look but you could also dip the surface of the cookie into a bowl of royal icing.

After all cookies are covered in Royal Icing, we can begin decorating.
* Make sure you are very careful when decorating, as the icing IS NOT fully dried yet! You can wait for the icing to fully set before decorating but to save time I just start once all cookies are flooded and have rested at least 30 minutes in order to form a crust.
Once you start decorating, each part of the decoration should rest at least 10-15 minutes in between. I use 20 second & stiff consistency for the decorations.

Let the cookies dry overnight, at least 8 hours before adding final details.
This is Very Important so that you don't accidentally poke a hole into the icing.
